Samling Hotel, Cumbria. 1 Michelin Star, 3 AA Rosettes Ian joined the Samling Hotel as Head Chef in July 2012, gained a Michelin star in the September of 2013 which he has retained until leaving in 2016, he was also awarded three rosettes in the AA guide that same month, other accolades included winning "World's Best Hotel for Dining" at the boutique hotel awards, for two consecutive years.

Moving south again, Ian joined the team at South Lodge as Head Chef of 'The Pass' Michelin fine dining restaurant. Working within a few feet from his guests, Ian had a unique opportunity to showcase his culinary talents and engaging personality and offer diners a truly interactive and memorable dining experience.
