Dilsk is an elegant and relaxed fine dining restaurant with a focus on sustainable ingredients meticulously sourced from ethical growers & local producers, in and around East Sussex.

Dilsk offers two tasting menus with a choice of a long or short version* and as a regular or vegetarian option, both available with optional wine pairings.(*short version not available Saturday nights)

Chef Patron Tom Stephens has spent the last four years as head chef at Michael Bremners 64 degrees restaurant. Tom trained under Michelin starred Tom Kerridge and Steve Drake before moving to London to take up positions at Pied a Terre under Marcus Eaves prior to opening Fera at Claridges as Sous chef for Simon Rogan.
